Creamy kale hummus covered in spinach, sour cream, whipped cream and yogurt. This kale hummus also has distinct lemony tones, is delicious and takes 5 minutes in the blender.
INGREDIENTS
- 2 cups kale
- 2 cups baby spinach, pressed into the cup with stems
- 2 cloves fresh garlic, chopped
- 400 grams chickpeas, drained and rinsed
- ¼ cup olive oil
- 2 tbsp sour cream
- 2 tbsps full-fat yogurt
- 1 tbsp heavy whipped cream
- 1 tsp salt
- ¼ tsp cumin
- fresh cracked pepper
- ¼ cup tahini
- Lime juice
INSTRUCTIONS
NOTES
You want the kale soft enough to blend and to not taste too bitter and tough so 5 minutes is good. After 5 minutes, turn off the heat and leave it in the water while you get your other ingredients into the blender.
